"It was founded 304 years ago during the Kofu years of the Edo period (1715 AD). The former Yamagata castle owner, Mogami Yoshiko, has also been known to be an enthusiastic sake maker, and Kotobuki Toraya Shuzo worked to make sake in his home territory, creating its representative sake ""Kajyo Kotobuki"" since the time of its establishment. Time passes, and comes the first Heisei year- The brewery relocates from Nanokamachi in Yamagata city to its present location, Takase, and renews the warehouse. The encounter with high-quality underwater water (soft water) of the Zaoyama Takase River, combined with traditional sake making cultivated over the course of 300 years and modern brewing technology, Kotobukitoraya's sake making is further disciplined and honed."

"Their sake is overall soft as it is made with soft water, and has a clear taste. It can be said that it is not ""hard and masculine"", but rather ""full and gentle"". Also, with regards to sake making, it is largely characterized by the ""hybrid sake making"" which combines traditional sake making and modern sake making technology. They have introduced leading edge equipment and is now possible to automatically manage the temperature and humidity which the Kurabito used to manage 24 hours a day. In addition to the stable management by machinery, the sensitivity and feeling of the Touji help grow ""clean kouji"", resulting in the ""clear taste"" unique to the sake of Kotobuki Toraya Shuzo."
